Welcome to Amalgama Gastronomia — the meeting point of a Catalan chef and a Peruvian chef, united in a single culinary universe.
Amalgama is born from the convergence of two perspectives, two personal histories and two cultural worlds that intertwine to give life to a cuisine with a strong identity. Created by Giselle and Àlex, the project reflects their shared desire to craft gastronomy that embraces diverse traditions while honouring the essence of local produce. This fusion of Catalan and Peruvian influences—enriched with Mediterranean, French, Asian, Canadian, Italian and Middle Eastern inspirations—shapes the soul of our culinary universe.
We believe in a cuisine that moves through simplicity, that expresses itself through clean and precise flavours, and that avoids excess in order to let each ingredient tell its own story. We enjoy playing with colours, contrasts and presentation, because an experience begins not only with taste but also with what the eye perceives. Yet above all, we believe in what happens around a table: in unhurried conversations, in shared laughter, in the sense of wellbeing that arises when good food becomes a moment to be lived together.
